That's how the Holy Grail War works; if there's a vacancy for a master, it automatically recruits people. Those with strong desires are prioritized, followed by magical aptitude.
Judging by the way Gilgamesh kept calling him a 'mad dog,' the Servant was most likely Berserker Lancelot.
However, without the wish to save little Sakura, all that remained was jealousy and hatred toward Tohsaka Tokiomi. Then, taking advantage of the chaotic battle, he snuck into the Tohsaka Family residence and used TNT explosives provided by a certain 'Magician Killer' to go down with Tokiomi.
